The Shun Classic Carving Knife is expertly crafted for precision slicing of meats, poultry, and large roasts. Its 20 cm blade features a VG-MAX steel core with a hardness of 61 (±1) HRC, encased in 32 layers of Damascus steel for exceptional sharpness, strength, and flexibility. The double-sided edge ensures smooth, accurate cuts with minimal effort.
Designed with traditional Japanese aesthetics, the slim black pakkawood handle offers excellent comfort and control. Reinforced with high-quality resins, the handle is highly resistant to moisture and built for long-lasting durability. The integrated tang enhances stability and balance, making the knife comfortable to use for extended food preparation.
