The Shun Classic Slicing Knife is designed for effortless precision when carving and slicing meats, poultry, fish, and large cuts. Featuring a 23 cm blade with a VG-MAX steel core and a hardness of 61 (±1) HRC, the knife delivers exceptional edge retention and cutting performance. The blade is encased in 32 layers of Damascus steel, combining remarkable sharpness with strength and flexibility. Its double-sided edge ensures smooth and accurate slicing with minimal resistance.
The traditional Japanese-style handle is crafted from durable black pakkawood, reinforced with premium resins for enhanced moisture resistance and long-lasting durability. Its chestnut-shaped design provides a comfortable and secure grip, while the integrated tang offers excellent balance and stability during use.
