The Kai Combination Whetstone DM-0400 is designed for sharpening and maintaining kitchen knives, including both double bevel and single bevel blades. The stone should be soaked in water before use and kept wet during sharpening for optimal performance.
Sharpen using light, even pressure while maintaining a consistent angle. For double bevel knives, a sharpening angle of approximately 15° is recommended. The whetstone surface should be regularly flattened using a flattening stone to ensure precise sharpening results.
